A few days ago I posted a recipe for Roast Chicken with Milk & Lemons. We had lots of chicken left over so I thought I’d try this Weight Watchers recipe for fruity chicken salad.
In Auburn, AL where I went to college, there’s a FABULOUS place called Chicken Salad Chick. They seriously have THE BEST chicken salad you will ever eat. And not just one kind either…they have a dozen different styles and they are ALL good. I know this because I’ve tried pretty much every one of them. This restaurant is one of those places that really became a part of my college experience, and I love it. But don’t let the little skinny girl in their logo fool you. Just because it has the word “salad” in it doesn’t mean it’s healthy. Maybe I loved Chicken Salad Chick a little too much, because they certainly did their part in helping me put on the “freshman 15.”
So I decided to find a Weight Watchers version. And well, this was a great way to use up that leftover chicken, but I can’t say it was outrageously good. Maybe I’m just comparing it to the delicious, mayonnaise-rich version of Chicken Salad Chick, but it was just lacking for me. Maybe I should’ve put my chicken through a food processor to make it a little more mushy and less chunky. Maybe the flavors of the chicken I roasted didn’t blend well with the fruit. I dunno. Although it wasn’t my favorite dish, my husband and I still ate it all. So maybe give it a try and see what you think. Maybe you can improve on this recipe!
Ingredients
- 2 red apples, peeled and chopped
- 2 tsp lime juice
- 2 cups diced rotisserie cooked chicken breasts
- 2 cups seedless red grapes - halved
- 4 Tbsp finely chopped walnuts
- 4 Tbsp light sour cream
- 2 tsp light mayonnaise
- 2 tsp Dijon mustard
- salt & pepper to taste
- 8 cups chopped romaine lettuce
Directions
- Toss apples in lime juice in a bowl. Add all other ingredients except lettuce and combine gently.
- Divide lettuce into 4 portions and top with chicken salad.
