It’s really feeling like fall around here in Alabama. A cold front has moved in and the wind has started getting a little blustery. This dish is perfect for such weather.
Because of the title, “SPANISH sausage and rice” and the fact that this recipe includes a packet of taco seasoning, I thought this would have a more distinct Mexican-food flavor. However, it actually tasted just like a mild jambalaya. The only thing missing is the shrimp…which I’m sure you could add easily! But trust me, this dish didn’t lack flavor. We really enjoyed this dish, and it made a ton. And just so ya know, the reheated leftovers taste just as good as when we first made it.
By the way, this recipe is as easy as dumping ingredients in a pot and heating. Bam. That simple.
Spanish Sausage and Rice

3 c cooked brown rice
14 oz smoked turkey sausage, thin sliced
2 14-oz cans diced tomatoes, undrained
2 c water
1 c salsa
1 c diced onions & peppers
1 pkg taco seasoning
Combine all ingredients, except rice, into a stockpot and stir well.
Cook 15 – 20 minutes, stir in cooked rice and let rest 15 min more.
