Crispy Mozzarella Chicken

Today’s recipe is one that is so ridiculously easy, you can hardly even call it a recipe.  In spite of being sssoooo simple, it still is one of the most requested meals I make.  In fact, I told my husband that it’s almost insulting that he prefers this super-simple chicken dish over something more elaborate that I slave over for hours.  But ya know what…if he likes meals that only take 30 minutes to make, require cheap ingredients, and taste great…well then I’ll keep giving them to him.

This dish uses Shake N Bake.  I know some people don’t like pre-made mixes, especially because of the high sodium content.  And, I get that..way to be healthy, folks.  However, the mixes are really good and as long as you don’t eat them on everything, you’ll be fine.  In fact, this recipe is actually from a low-fat menu on emeals.  So if you’re watching your fat intake, this is a great meal for you!

Crispy Mozzarella Chicken

Serves: 4

4 chicken breasts
1 packet Shake N Bake extra crispy mix
1 c part skim shredded mozzarella

Preheat oven to 375 degrees F.

Pound chicken to 1/4 inch thickness.  Coat with Shake N Bake as directed on package.

Bake for 10 minutes.  Top with cheese and bake 5 minutes more.

* I know my chicken looks thicker than 1/4 inch.  That’s because I was too lazy to pound them, but if they’re really thick you’ll want to do it.  Also, lining your pan with foil will prevent cheese from baking to your pan!  Lessons learned…
