When they say EASY Oven Southwest Chicken…they definitely mean easy. Just toss some stuff in a dish and bake it. This meal gets the trifecta of cooking: it’s easy, healthy, AND tasty. If it meets all 3 requirements, I’m sold, and this one does.
I served this with rice as a side dish, but I think it’s a requirement for this meal! It really made this single dish into a whole meal, like a Spanish style casserole. Since I think the rice was so imperative to this dish, I added it into the recipe. Trust me, you’ll be glad I did because it’s delish.
Easy Oven Southwest Chicken

3/4 c chicken broth
1 can black beans, rinsed & drained
1 can red beans, rinsed & drained
1 c salsa
½ t minced garlic
3 to 4 boneless/skinless chicken breast, cubed
Box of Uncle Ben’s Spanish Rice
Sour cream (optional)
Preheat oven to 350 degrees F.
Combine all ingredients except for rice in a sprayed 8×8 baking dish and bake 45 min or until done.
Meanwhile, cook rice according to package directions. Serve chicken over rice with optional sour cream on top.
