This is another meal that my awesome husband made for me while I was sick with the flu. And I gotta say, he knows how to work it in the kitchen! This chicken was so good, I ate the whole piece even though I was feeling ill and had no appetite. I just couldn’t waste it! It was too good!
The chicken itself had lots of flavor because of the spice rub that was cooked onto it. Then the sauce had even more flavor with the apricot and lemon. The sauce definitely had a sweetness to it. I honestly love slightly sweet sauces on meat, but I know some people prefer to leave the sweets until dessert. But those people sure are missing out because this was delicious!
This is a great 30 minute, weeknight meal that is easy and healthy. However, this was so delicious and even looks a little fancy that you could totally have it for a nicer event like a dinner party or a date as well!
Apricot Lemon Chicken
3/4 t chili powder
¼ t salt
⅛ t pepper
1 1/2 T water
4 boneless skinless chicken breasts
3 T apricot all fruit spread
1 1/2 T lemon juice
1 t grated lemon zest
Combine first 3 ingredients; rub over chicken. Heat a large sprayed nonstick skillet over medium heat. Add chicken; cook 6 minutes on each side or until done.
Remove chicken & keep warm. Add apricot spread, lemon juice, and water to pan. Stir until smooth. Cook 1 minute more.
Spoon sauce over chicken; sprinkle w/ lemon zest.
