I often hear people say that they don’t cook fish at home “because they don’t know how to cook it.” Well, I’m here to tell you that it’s really not as difficult as you might think. In fact, it can actually be quite simple! And because fish cooks so quickly, it’s also usually a quick dinner to prepare.
This is one very, very simple recipe for tilapia that turned out delicious. Seriously, the recipe only involves two steps and it only took about 10 minutes to make. I really enjoyed the Italian flavors in this dish: the olive oil, garlic, and basil did a nice job of flavoring the fish. I know that it looks rather pale in the picture, but trust me it still tastes good!

4 T minced fresh basil
2 t olive oil
1 t minced garlic
1/4 t salt
dash of pepper
4 tilapia fillets
Combine first 5 ingredients; rub onto both sides of fillets.
Heat a large sprayed nonstick skillet over med heat. Cook filets 2-3 min on each side or until fish flakes easily.
