So ya know those Dorito Loco Tacos at Taco Bell? It’s basically just a taco in a Dorito shell. I don’t get what all the hype is about, but it is seriously a craze that is sweeping the nation. People have been going nuts over this thing. Well, I found a recipe for a healthy dorito loco inspired taco casserole, and thought I’d give it a try. I know it’s not the same as trying the thing at Taco Bell, but this saves me all those calories…and having to eat at Taco Bell.
This casserole was awesome! It really just tasted like your typical taco casserole, but a REALLY good one. We loved it, and have been enjoying the leftovers too! The only disappointing thing about it was the Dorito layer on the bottom. The recipe calls for Baked Doritos, and the original post claims that they don’t get soggy when you bake it. Unfortunately, my store didn’t have the baked version so we just had to go with plain ol’ Doritos. The chips in mine definitely turned soggy, but maybe if you are lucky enough to get the baked kind, they will retain their crunchiness! It really didn’t matter though. This thing was crazy good even with the soggy chips at the bottom.
Ingredients
- About 24 Baked Doritos, plus more for serving
- 1 Tablespoon Olive Oil
- 1 Onion, chopped
- 2 Garlic Cloves, chopped
- 2 Jalapeno Peppers, chopped (you can leave these out if you don't want it so spicy)
- 1 pound Extra Lean Ground Beef
- 2 Tablespoons Taco Seasoning
- 1 can Black Beans
- 1 cup Salsa
- 1 cup Reduced Fat Cheddar Cheese, shredded
- Optional: Additional toppings such as jalapenos, sour cream, olives, or guacamole
Directions
- Preheat oven to 350 degrees F.
- Heat oil in a large skillet. Add the onion, garlic and jalapenos. Saute 5 minutes, or until soft. Add meat and taco seasoning. Cook, breaking up meat with a wooden spoon, for about 5 minutes. Add beans and salsa. Mix well and continue to cook until salsa thickens.
- Line the bottom of a casserole pan with Doritos chips, pressing down on them lightly to break them into bite-sized pieces. Spread the meat and bean mixture over the chips and top with cheese.
- Bake for 20 minutes or until cheese is melted and gooey.

I did try the Dorito Taco while we were on our Vacation this past summer in the U.S and it was pretty delicious! 🙂 I will have to give this a try for sure!

I tried this last week and was able to find the Baked Doritos at my grocery store After baking, they WERE still crispy and not soggy! It was delicious!

I made this for dinner and it was gobbled up!! I put the chips on top of the meat mixture then the cheese…no soggy chips. Thanks for the great and easy recipe!

I have been making something like this for years. I use corn tortillas on the bottom, then mix the other ingredients together with homemade cream of mushroom soup (low fat), then I top the corn tortillas with the meat mixture, and bake for 30 min at 350,, I take the taco bake out of the oven, add doritos, crushed and top with reduced fat cheese, and bake until melted and bubbly, about 35 minutes more. Top with a dolop of reduced fat sour cream and sliced green onions. It’s super good!
