So for the past couple weeks here in good ol’ Alabama, the weather has felt less than wintry. Temperatures have been in the high 60’s and low 70’s. Some might complain that it’s hard to get in the Christmas spirit with such weather, but I say BRING IT ON. I really really hate the biting cold and the stupid wind. I’d be fine with living in a place like Miami where it never gets very cold.
However, yesterday it rained (like crazy downpour and flood-causing rain), and it brought in a cold front. Two days ago it was 68 and today it was 48, with a wind chill in the 30’s. Now I know some of you live in places where it’s like -4 degrees and you probably think I’m a pansy. But hey, I’m a southern gal, and we like our summers hot and our winters mild.
So, with this
biting freezing dumb ridiculous Christmas-y cold, it’s time to bust out some more soups. This is a delicious one, and it is SO EASY to make. Seriously, you just dump cans into a pot and let it simmer, it’s that simple. This soup will certainly warm you up from the inside out.
Fiesta Chicken Soup
12 oz can chicken breast, drained
1 can seasoned black beans, drained
14 oz can FF chicken broth
1 can whole kernel corn
1 can diced tomatoes w/ green chilies
Combine all ingredients and bring to boil. Reduce heat and simmer 30 min.
