In the past, I’ve done a couple of posts on Chicken Parmesan recipes.  Each one I post is unique in some way, whether it’s a healthy version or a stuffed version, or in this case–a casserole version.

I was really excited to try this recipe, because I see it all over pinterest, and it just seems like such a good idea!  The author of this recipe even says he likes it better than the original chicken parmesan (which is saying a lot because that’s one of my favorite dishes)!  Here’s the gist of it:  You put chicken breasts in a baking dish, top with cheese, sauce, and herbs,and then put croutons on top.  The croutons essentially act as the breading of the typical chicken parmesan.  The underside of the croutons should turn moist from the sauce while the top side stays nice and crunchy.

Well, all I can say is that this was good, but it didn’t meet my really high expectations.  The croutons were definitely crunchy but didn’t really get moist on the bottom.  It pretty much tasted like having croutons on top chicken, cheese, and sauce.  Mind you, that isn’t a bad taste at all!  In fact, it was yummy!  However, the croutons definitely didn’t do a good job of replacing the breading on the chicken.  It was also kind of hard to eat because the croutons would just fall off the top and couldn’t be cut with the chicken because they were still too crunchy.  Maybe smaller (not so thick) croutons would’ve worked?  Oh well, it tasted good, but I won’t be using this dish to replace the original chicken parmesan anytime soon.

Chicken Parmesan Casserole

Serves:  6

2 tbsp olive oil
2 cloves garlic, crushed
hot red pepper flakes, to taste
6 boneless skinless chicken breasts
2 cups spaghetti sauce (plain or flavored, your choice)
1/4 cup chopped basil
8 oz mozzarella, shredded
4 oz Parmesan, grated
1 (5-oz) package garlic croutons

Preheat oven to 350 degrees F.

Put olive oil and crushed garlic in the bottom of a 9×13 baking dish.  Spread it around to cover the bottom of the dish.  Sprinkle with red pepper flakes.  Top with chicken breasts.

Pour sauce on top of chicken.  Sprinkle with basil and half of both cheeses.  Spread croutons out evenly on top and then add remaining cheese.

Bake for about 35 minutes.  Different size chicken breasts will need to cook for different times.  Make sure your chicken is cooked through!
