About a week ago, I posted a recipe for some delicious Italian Pie.  Well apparently, I’ve been in the mood for international food in pie form because this week, we’ve gone from Italy to Mexico!

This dish is super simple to make.  I know you’re probably looking at all that gooey cheese and mounds of beef and thinking that this has gotta be loaded with calories.  But believe it or not, it’s actually a weight watchers recipe!  Plus, this meal is nice and hearty so you won’t be craving snacks after dinnertime.  All in all, this is a great weeknight meal that is quick and easy.  If your family loves Mexican food, but you’re not interested in all the greasy fat, this is a perfect solution!

Serves: 6 (the slice pictured is actually a 4th, not a 6th of the pie)

Ingredients:
1 lb lean ground round beef
½ c chopped onion
1 pkg taco seasoning
4 oz can diced green chiles, drained
½ c Heart Smart Bisquick® mix
1 c fat free milk
½ c fat free egg substitute
½ c shredded 2 % sharp cheddar cheese

Directions:
Preheat oven to 400 degrees F.

Brown beef & onions together; drain. Stir in taco seasoning.  Place in sprayed 9” pie pan & top with chilies.

Blend Bisquick®, milk, & egg substitute together and pour over beef slowly.

Bake 25 minutes. Sprinkle with cheese. Bake for 5 – 8 min longer.
