It’s been a while since I posted a Weight Watchers recipe, so I thought it was time for another! Today’s post will include the recipe for both the chicken and the potatoes, so it’s a 2-for-1 deal!
The potatoes take about 20 minutes to bake, and while they’re in the oven, you can cook the chicken. So this entire meal shouldn’t take any more than 25 minutes. Not only is it quick, but it also uses very common ingredients that you probably already have. So this is diet friendly, time-friendly, and budget-friendly! Gee, what a friendly meal.
Though this meal is not extravagant or decadent, it’s definitely a good meal for a busy weeknight that will please your family! And that’s what normal cooking is all about!
Tuscan Chicken & Potatoes
WW Points (Chicken): 5
WW Points (1/2 c serving of Potatoes): 3
4 boneless chicken breasts
¼ teaspoon salt
⅛ teaspoon pepper
¼ teaspoon Italian seasoning
1½ teaspoons olive oil
½ pint grape tomatoes
1 tablespoon balsamic vinegar
1½ teaspoons water
1½ cups cubed potatoes
⅛ teaspoon salt
⅛ teaspoon pepper
1/2 teaspoon Italian seasoning
Preheat oven to 425 degrees F. Place potatoes on a sprayed pan and also spray potatoes with no-stick spray. Sprinkle with seasonings and bake for 20 – 25 minutes.
Meanwhile, pound chicken breasts thin; sprinkle with dry seasonings.
Heat olive oil in a large sprayed skillet on meduim high heat. Add chicken; brown each side 5 minutes. Add tomatoes; cook 4 minutes or until tomato skins pop. Add balsamic vinegar & water; cook 4 minutes more.
Make sure chicken is cooked through before serving. Serve chicken with potatoes.
