Happy Easter, everyone! I know these cupcakes are SUPER ADORABLE, but really let’s not forget why we celebrate this holiday. Praise God that we serve a risen Savior! He who knew no sin became sin so that we might become His righteousness! I love Jesus 🙂
We will be taking these ridiculously cute cupcakes to church tomorrow to share with our Sunday School class! These cupcakes are uniquely special to me because they mark a Normal Cooking first! I’ve never decorated cakes/cupcakes before! For Christmas, I got a Culinary Institute Decorating Kit, and I’ve been waiting for a chance to use it. I know that for some of you who are practically pros at cake decorating, my attempts may look rather wimpy, but I’m proud of them! It was, after all, my first time ever using a pastry bag! (and I felt pretty legit)
I just used a regular boxed yellow cake mix for the cake, but you could certainly use your own favorite recipe! But because I don’t want to leave you without a recipe for today, I’ll tell you how to make this awesome butter cream frosting! It was deliciously light and fluffy and held food coloring well. Plus it only takes a couple minutes to whip up.
- 1 c (2 sticks) of butter
- 3 c confectioner's sugar
- 1 t vanilla extract
- 1 T whipping cream (plus more if necessary for consistency)
- Mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
- Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
