Mmmm summertime. I love grilled food! We use our grill year-round, but it definitely goes into overtime during the hot summer months. This pesto shrimp is unbelievably easy and tastes amazing. I love that these are so low-fat and healthy! Once they’ve marinated, it only takes a few minutes to grill and serve. Great for a weeknight meal!
This dish is so simple, it’s hardly even really a recipe. It’s more like just an idea for you to copy or modify to make it your own! Simply marinate shrimp in pesto sauce (which you can buy in a jar or make your own) for a few hours, then skewer, and grill. You could eat them plain, put them in a hoagie bun, or put inside a wrap. These would be delicious with mozzarella and roasted red peppers in a sandwich or wrap.
Grilled Pesto Shrimp

1 lb jumbo shrimp, peeled and deveined
1 small jar of pesto sauce (or if you want to make your own, recipe below)
Combine shrimp and pesto sauce in a large bowl. Marinate for at least an hour, or up to overnight.
Thread shrimp onto skewers. If skewers are wooden, make sure you soak in water for 20 minutes first.
Grill shrimp for 3-4 minutes on each side, or until pink and opaque throughout.
1 cup fresh basil leaves, chopped
1 clove garlic
1/4 cup grated Parmigiano Reggiano
3 tbsp olive oil
kosher salt and fresh pepper to taste
In a food processor pulse basil, garlic, parmesan cheese, salt and pepper until smooth. Slowly add the olive oil while pulsing.
