Today’s dish is another super simple yet delicious recipe.  It’s a simple chicken breast with only 2 additional ingredients: BBQ sauce and pepper jack cheese.  That’s it!  The few ingredients make this dish easy on your wallet and won’t take up much of your time.

The chicken is cooked on the grill, and I hope that wherever you are, the weather is as perfect for grilling as it is here in Alabama!  We’ve had some beautiful fall days recently, with bright blue skies and temps in the 70s with a nice breeze, it’s been “right near perfect!”  It did get up to 90 degrees again yesterday so obviously we aren’t totally done with summer just yet.  But regardless of the weather where you live, you need to make this dish!  It’s just too easy and yummy not to!

Barbecue Jack Chicken

Yields: 4 servings

Barbecue Jack Chicken


  • 4 boneless skinless chicken breasts (6 ounces each)
  • 4 slices pepper Jack cheese
  • 1 cup barbecue sauce


  1. Carefully cut a pocket in each chicken breast half. Stuff with cheese slices (break into smaller pieces if necessary to fit in pocket).  Use toothpicks to seal pocket, if necessary.
  2. Grill chicken, covered, over medium heat, basting frequently with barbecue sauce.  Cook for about 15 minutes, turning once, or until chicken is cooked through.
