Everybody needs a couple of go-to recipes that are cheap, quick, and easy.  This recipe definitely meets all those requirements, plus the stuffing mixture on top of this chicken just gives you  some warming, down-home comfort food satisfaction.

This recipe seriously could not be any easier.  It takes about 5 minutes to prepare and 30 to bake.  Plus it only has 4 ingredients.  Pretty great, right?  I wasn’t sure how I’d feel about the texture of this dish, but I ended up loving it.  It had a warm, creamy, and soft bread-like texture along with the chicken breast.  The herbed stuffing mix really provides a great deal of flavor, without you having to add any additional seasonings.  It was delish!  And if that’s not enough, this recipe only uses one bowl for mixing and one casserole dish for baking.  That’s it!  Yay for almost no dishes to wash!

Baked Chicken with Stuffing

Serves: 4

1-2/3 cups  hot water
1 pkg.  (6 oz.) Stove Top Stuffing Mix for Chicken
4  boneless skinless chicken breasts, cut into bite-size pieces
1 can  (10-3/4 oz.) condensed cream of mushroom soup
1/3 cup Sour Cream
Preheat oven to 400 degrees F.
Add hot water to stuffing mix; stir just until moistened.

Place chicken in a 13×9 inch baking dish.  Mix soup and sour cream until well blended; pour over chicken. Top with stuffing.

Bake for 30 minutes or until chicken is done.
