Whenever I order pizza (which is rare), my favorite kind is the “meat lovers” pizza. Gimme some pepperoni, sausage, ham, bacon, whatever meaty goodness I can get! Obviously, when I do eat pizza, health value is not my top priority. Plus, I’m not a fan of the typical veggies that come on pizza: peppers, onions, etc.
This vegetable pizza, however, puts a little twist on the original version you find at pizza joints. I loved putting broccoli and carrots on pizza! I also loved the ranch sauce in place of tomato based sauce. It really compliments the veggies well! I dunno about you, but I love dipping veggies in ranch dressing, and this was definitely similar to that. One of the best things about this pizza is that 1 slice is only 240 calories!
Garden Ranch Pizza

Serves: 8
Ingredients:
1 refrigerated pizza crust
1/2 c light mayo
1/2 package of ranch dressing mix
1 garlic clove, pressed
2 c shredded mozzarella cheese, divided
1 c coarsely chopped broccoli
1/2 c diced red bell pepper
1 medium carrot, sliced
1/2 c pitted olives, sliced
1/4 c grated Parmesan cheese
Directions:
Preheat oven to 400 degrees F. Unroll dough onto pizza pan or stone. Pre-bake for 8 minutes, and then remove from oven (but leave oven on).
In a small bowl, combine mayo, seasoning mix, and garlic. Spread over crust to within 1/2 inch of the edge. Top with 1 c of mozzarella cheese.
Sprinkle vegetables over pizza. Top with remaining 1 c of mozzarella cheese and the Parmesan cheese.
