My last post featured Baja Shrimp, and I promised you the recipe for the side dish seen on the plate in the picture. So here it is folks! This tropical slaw was really good. I usually don’t even like any kind of slaw. I guess I’m just not much of a shredded cabbage fan. However, this tropical slaw changed my mind! I can definitely enjoy shredded cabbage when it’s partnered with juicy mango and pineapple!
This was quite possibly one of the most refreshing things I’ve ever eaten. It’s just so light and fruity and tastes like Summer in a bowl. Yes, I know that we are ushering in the Fall season, but I’m still enjoying this warm weather and fresh fruit while we got it! If it’s already too cold to enjoy this dish where you live, just save it for next year :-). You won’t regret it!
Lastly, this is actually a Weight Watchers dish. I’ve discovered it’s not so easy finding good WW side dish recipes, but this is a good one!
Ingredients
- 4 cups coleslaw mix
- 1 diced mango
- 1/2 cup diced pineapple
- 3 Tbsp light mayo
- 5 tsp chopped cilantro
- salt and pepper, to taste
Directions
- Toss together all ingredients and enjoy!
