Summer is definitely my favorite season. There are lots of reasons why I like summer: the weather, the vacations, swimming, the way all of society seems more relaxed as a whole…but one reason I love summer is the FOOD! When I think of summer foods, I think of meat cooking on the grill and fresh fruit. This recipe combines both of those classic summer favorites!
This is one of my all time FAVORITE recipes. I know you might think I say that a lot. But seriously. This is one of my top 10 dishes! The nectarines get nice and tender on the grill and they pair so well with the pork! But the key is really the honey marinade. It’s so sweet and balances the savory flavor of the pork. Oh my goodness my mouth is watering just remembering what this tasted like! I also love how simple this is to make. Just mix together some marinade ingredients, marinate the pork, assemble the kabobs and grill! That’s all it takes to enjoy this blissful summer meal…
- 2 Tbsp Dijon Mustard
- 2 Tbsp Honey
- 3 Tbsp Olive Oil
- 1 Tbsp Minced Garlic
- 2 1/2 tsp salt
- 1 tsp pepper
- 2 lbs pork ribs cut into chunks (cut off excess fat)
- 4 large nectarines
- 1/2 cup honey
- In a large bowl mix the first six ingredients and stir in the pork pieces. Marinate at least 30 minutes, longer if possible.
- Cut each nectarine into six wedges. Alternate the nectarine and pork onto a skewer.
- Place kabobs on a grill and cook until browned. While cooking, baste the kabobs generously with 1/2 cup of honey.
